This is a traditional food that has been passed down since ancient times in the Kiso region, and is an unsalted pickle made from the stems and leaves of red turnips that use no salt and are fermented with vegetable lactic acid bacteria. It can be eaten in miso soup or as an ingredient in soba noodles.
